100g butter/margarine
100g sugar
100g self-raising flour
2 pinches baking powder
2 eggs
Makes 12
Oven setting: 180 C
Baking time; 15 min
Cream butter and sugar. Add SR flour and baking powder, mix well. Add eggs and mix well. Spoon into patty papers, filling them only to 2/3 full. Bake 15min, or until golden brown.
To ice them: Allow patty cakes to cool. Mix 3 tablespoons icing sugar with 1 tablespoon boiling water. Add either more icing sugar if the mixture is too runny, or a tiny bit more water if it's too firm. Add a few drops of colouring, if desired. Spread over patty cakes and leave in a cool place to set.
Notes: These are like 'sponge cake' cup cakes.

Choc-chip Cookies
1 cup self-raising flour
1 cup plain flour
125 margarine
1/2 cup sugar
1 egg
1 generous tablespoon honey
milk
125g (or more) choc-chips
Oven setting: 180 C
Cooking Time: 15 mins
Cream butter and sugar. Add egg and mix well. Add flours and honey; mix well. Gradually add milk until the mixture is moist enough. Lastly, add choc-chips and mix through. Form small balls and place on tray lined with baking paper. Bake for 15 mins or until lightly browned. Yum!
